My "Go-To" Dessert
This Strawberry Angel Trifle has become my go-to dessert lately. I've made it twice in the past week and would make it again in a heart beat. It is one of mine and my family's favorites. It's just that simple and classic combination of strawberries, angel food cake and whipped cream. I "go-to" this dessert because it's so simple to prepare yet so big on taste. If you find your strawberries on sale like I have the past few weeks, pick up an extra pack and make a trifle. You won't be disappointed. You could also make mini trifles. Go here to see them. Strawberry Angel Trifle
1 angel food cake(already prepared or from mix)
2 small containers Light Cool Whip
1 lb. strawberries, stemmed and cut into pieces
Cut cake into slices and tear slices into small bite size pieces and layer in trifle bowl or large glass bowl. On top of cake pieces, spoon about 3 spoonfuls of Cool Whip or enough to cover cake pieces. Sprinkle a layer of strawberries on top of Cool Whip. Repeat layers ending with the strawberries on top. *In my opinion, this is even better when it has been stored in the refrigerator for a few hours before serving.

Pampered Chef Pineapple Cutter Review
I've been meaning to blog about the Pampered Chef pineapple cutter for a while, but now I am finally getting to it. This is the first product review I've done on my blog. I hope you find it informative and helpful. We (actually my husband) decided to order this because he LOVES fresh pineapple. No canned for him. However, we both think it's kind of a pain to peel and cut it all up. That's where this little baby comes in. I have many PC products and have always been happy with them and the same goes for this one. It is made similar to their apple wedger except much bigger. It is strong and sharp to cut through the pineapple. I think you do have to pay attention to the size of the pineapple you are cutting. If it's too large it might not get all the peel off of the pieces. It cut the pineapple into nice rings and then we just cut them up into smaller pieces. Overall I found it very easy to use and was happy with it. It eliminated all the cutting off the peel and coring it. Also, it's dishwasher safe along with the cover that comes with it. Hello! We love that! I would recommend it if you're a pineapple eater!

Snacks and Scentsy
I recently had a Scentsy party at my house and got to see all of their great products and smell - a lot. If you're not familiar with Scentsy, it is a company that sells wick less scented bars ,plug-in warmers, room spray and more. It's pretty new to me so I wanted to check it out. I can't wait to get my products and start using them. I'm pretty much hooked on the Havana Cabana and Camu Camu scent. Love it! Do you have a favorite Scentsy smell. It's not a party without food, so on to the snacks! The party goers snacked on angel food trifle, fresh fruit, sugar cookie bites and party cheese log with crackers. You can get the sugar cookie bites and party cheese log recipes below. I LOVE the cheese log recipe. This was the first time I had made this recipe and it has a great flavor ....... or maybe I just love cheese period! Enjoy!
Sugar Cookie Bites
1 package sugar cookie mix
butter and egg to make cookies
Hershey's Kisses
Mix together sugar cookie mix, butter and egg as directed on package. Roll dough into walnut size balls and put balls into mini muffin tin. Bake at 350 for about 12 minutes or until edges are slightly browned. When done, push a Hershey's Kiss into the center of each cookie. Carefully remove each cookie bite from pan. You can also melt chocolate chips and drizzle over cookie bites.
Party Cheese Log
adapted from recipe in Costco Magazine
16 oz. cream cheese, softened
8 oz. sharp cheddar cheese, shredded
1 Tbsp. chopped red bell pepper or pimiento
1 Tbsp. finely chopped onion
2 tsp. Worcestershire sauce
4 tsp. lemon juice
dash of ground red pepper
dash of salt
chopped pecans for garnish
In a large mixing bowl, beat the cream cheese and cheddar cheese with mixer at medium speed until well blended. Add bell pepper or pimiento, onion, W-sauce, lemon juice, red pepper and salt; mix well. Chill for several hours or overnight.
Shape the mixture into a log. Roll or press pecans on log. Serve with crackers.

My Broken Couch-Fixed!!!
This post is a shout out to my husband whose birthday is today!!!! Happy Birthday!! I love you!!
Our daughter was asking him how old he would be and he gave his standard joke: I'm as old as my tongue and a little bit older than my teeth. She responded by telling him,"Dad, you're as old as you feel." He said he felt 25. Ha! Ha!
Now, on to this pic. That is my couch. Broken, battered and sad. A few days ago it lay in four pieces on the floor. I should say that it wasn't broken into four pieces, but my husband had to take it apart piece by piece to fix it. This is the second time he has had to do this. Each time a different problem. The first time a board was broken when a group of cub scouts pounced on it and then a board along the bottom broke from wear and tear. I guess we just have a piecer couch. It's nice and I like it, but this is getting old. My husband came to the rescue and fixed it all up and it's in one piece again and stronger than before. I'm so thankful to be blessed with a husband that is handy and saves us A LOT of money that would have been used to hire people. I'll just throw in that he also just changed the oil and replaced the back brakes on my van. You're the man! Thank You!

Easy Fudge Pie
On Sunday I pulled out of my recipe box this quick , Easy Fudge Pie recipe that I hadn't made in a while. Like the recipe name says, it is very easy and might I add delicious. My kids told me that it was like a brownie in a pie. It is sort of, but not. This pie is very moist and fudgy and not as dense as a brownie would be. I'm probably not explaining it very well, so I guess you'll just have to make it and see what I mean. A piece of this Easy Fudge Pie would also go great with whipped cream or a scoop of ice cream, as well. Get the recipe below.
Easy Fudge Pie
1 frozen pie crust (not deep dish) or homemade pie crust
1/4 c. baking cocoa
1 c. sugar
1/4 c. flour
dash of salt
2 eggs
1/2 c. melted butter
Combine cocoa, sugar, flour and salt in a mixing bowl. Add eggs and butter. Mix well. Pour into pie crust. Bake at 350 for 35 to 40 minutes or until filling is set.

Easy Bake Oven Fun
I've had a little blogging break the past couple of weeks, but I'm trying to get back in the swing of things today. I'm happy to be blogging again because it is an outlet that I enjoy. So here we go!
Last week was spring break for my kids and I can't say that we did anything super exciting. The weather was not the best so we didn't even get to play outside very much. Laci and I did take some time to get out her Easy Bake Oven so she could bake up a yummy little cake. She loves to help me cook and bake, and this time she got to do everything herself. Her final product was a yellow cake with chocolate frosting with a powdered sugar heart on top. She even shared with her brother and sister. A sweet little treat for all of them.

Almond Joy Pieces- A New Favorite
Oh my---- have you tasted these? I have and they're a new favorite for me. I love, love, love coconut, so when I saw these little bits of goodness I had to give them a try. Taste like an Almond Joy just like it says. I mean you can't replace the delish candy bar, but these are really good. I don't eat them all the time or anything, especially since I started a new workout program and am really trying not to have very many sweets,but I will let myself snack on these every now and then.Apparently their are a variety of new "pieces" candy out now. We've come along way from just Reese's pieces. Enjoy!

Goodbye Old Friend
Today I say goodbye to an old friend. Not an actual person, but to my trusty wallet." Why is she blogging about her wallet?"you might ask.--- I asked myself that, too. --Well, I just think it's interesting that I've had the same old worn out wallet for 13 years. Yes! 13 years! That's a year longer than I've been married. It has served me well through the years. I bought it at a Fossil outlet store near Park City, UT when two friends and I were on a trip there in 1997. That seems so long ago. It was a great deal at only $9. It's all leather, so I had to get it. This old wallet has seen many a purse, survived being left on a plane, weathered water from spills and much much more. It will no longer button and the zipper on the back is broken, so all my coins had to be put in with the paper money,but I still kept hanging on to this thing. Why?I guess because it still served its purpose for me and I really liked it.But, at last it was time for a new wallet.
Ta-Da!! This is the replacement. A nice shiny, new, green crocodile print wallet from Liz & Co., which I might add was on sale. It's all pretty and nice. I don't know what to do with myself. Ha! Ha! It does feel nice to actually have a place to store my change and this one even buttons!!

Easy Peach Cobbler
It seems like this is becoming a food blog with all these recipes, but I guess that's okay. What can I say? I like food. Today I'm sharing a recipe for a super easy peach cobbler. Now, this is not my grandmother's peach cobbler with the homemade crust. She used to make a mean peach cobbler.It was so good, but I'm sure it took a while to make. This one has 5 simple ingredients that combine for some yum! The ingredients are easy to remember too. They are all 1's. One cup, one stick and one can. E-Z! Get the recipe below and try it out for dessert.
Peach Cobbler
1 c. Bisquick
1 c. sugar
1 c. milk
1 stick butter
1 can of peaches
Melt butter in a medium sized microwave safe bowl. Stir in Bisquick, sugar, and milk. Mix well. Pour peaches, with liquid, into an 8x8 casserole dish. Pour mixture on top of peaches and bake in a 350 oven for about 40 minutes or until crust is golden brown.
